Prep Time: 20 minutes | Yield: 12

Ingredients

  • 2 3/4 cups all purpose flour
  • 1 Tbsp sugar
  • 2 tsp baking powder
  • 3/4 cup minced fresh chives
  • 1 1/2 cups coarsely shredded cheddar cheese
  • 3/4 cup (or more) chilled witbier
  • 2 eggs
  • 1 tsp salt
  • 1 Tbsp vegetable oil
  • 2 tsp Dijon mustard
  • Sesame seeds

Directions

  1. To make these cheesy and chivey beer scones, preheat oven to 425°F.
  2. Sprinkle a baking sheet with flour (I just used parchment paper).
  3. Whisk first 3 ingredients in large bowl. Stir in chives and cheese.
  4. Whisk 3/4 cup witbier, 1 egg, oil, and mustard in small bowl. Gradually add beer mixture to dry ingredients, tossing until moist clumps form and adding more beer by tablespoonfuls if dough is dry (I ended up using a little more than a cup of beer).
  5. Turn dough out onto lightly floured surface; knead just until dough comes together.
  6. Pat out dough to 1-inch-thick round. Using 2 1/2-inch-diameter cutter, cut out scones. Gather dough scraps and repeat. Transfer to prepared sheet. Whisk remaining egg in small cup; brush over scones. Sprinkle with sesame seeds.
  7. Bake scones until golden on top and tester inserted into center comes out clean, about 14 minutes. Cool scones on sheet 5 minutes. Transfer to basket.
  8. Serve warm and enjoy!

Brewer’s Flatbread Pizza with Bacon & Sour Cream Topping

Depending on which toppings you use, pairing this pizza with different beers will make all the flavors shine. The sweetness of the honey and tomatoes would work nicely with everything from a crisp pilsner all the way to a hoppy IPA. If you go with the bacon topping, you could pair a hoppy red or go with an IPA to cut through the fattiness of the bacon and sour cream.

Brown Ale Butternut Squash Mac and Cheese

This Brown Ale Butternut Squash Mac and Cheese created by Bryan Richards, The Wandering Gourmand, transforms a traditional dish into seasonal classic. The butternut squash highlights a brilliant use of fall produce and delivers a pleasant sweetness. The brown ale adds a level of bitter, yeast, and caramel malt flavors that brings the cheddar cheese alive and beautifully unites it with the butternut squash. This dish is the perfect accompaniment to your holiday dinner spread or a fun, standalone weeknight dinner.
