Saint Paul, Minnesota—A new brewery and taproom is coming to St. Paul’s Lowertown neighborhood in early 2017. Barrel Theory Beer Company aims to bring industry experience and passion for well-executed beer to Saint Paul’s ever-growing beer scene. Barrel Theory derives its name from Liebig’s Law of the Minimum which explains that the capacity of a barrel is always limited by the shortest stave. Co-founder and Surly Brewing alum Brett Splinter explains, “We don’t want to be defined by our best or most successful product, but by the overall quality of our service and our beers.”

The brewery’s 4,000-square-foot main floor will house a 10-barrel brewhouse adjacent to a 90-seat taproom which will feature curated food offerings from Dark Horse Bar & Eatery located next door. Initial distribution plans include a small number of draft accounts in and around the Twin Cities with the majority of beer being sold fresh out of the taproom in growlers, crowlers, and 750ml bottles.

Taproom offerings will not typically conform to traditional style categories but will include various hop forward IPAs, fruited Berliner Weisse-style ales, barrel-aged stouts, and barrel-aged mixed fermentation beers from head brewer and co-founder Timmy Johnson (also previously of Surly Brewing Company). The team plans to eventually collaborate with brewers from around the country based on friendships developed over the years.

“We are beyond excited and humbled to be able to share our vision for quality product and customer experience,” Splinter adds. “We couldn’t be happier to be doing this in Lowertown Saint Paul, a community we’ve always hoped to call home.”
