This Friday, March 2nd, 2018, Jester King is excited to introduce Serrata — our collaboration beer with Gigantic Brewing Co. in Portland, Oregon brewed with oats, spelt and Japanese red shiso!
During the spring of 2017, the brewery joined friends from Gigantic in Nagano, Japan for the Snow Monkey Beer Live beer and music festival. After bonding during our time overseas, we were inspired to make a beer together. According to our Head Brewer Averie Swanson, “We really just wanted to make a simple, drinkable saison; the heavy spelt grist provides a nice full body and the subtle addition of shiso leaf, steeped in the wort as a tea, created a soft tannic character and added notes of white flowers and coconut flesh. As so frequently is the case with herb and spice additions in our beers, a little goes a long way, and I expect the shiso to continue become more apparent in the beer over time.”
Serrata was brewed in November of 2017 with well water, Texas malted barley from Blacklands Malt, German malted barley, oats, spelt, hops, and Japanese red shiso. It was fermented in stainless steel with our mixed culture of brewers yeast and native yeast and bacteria. It was packaged in January of 2018. Serrata is 5.6% alcohol by volume, 26 IBU, 4.1 pH, has a finishing gravity of 1.002 (0.5 degrees Plato), and is 100% naturally conditioned through refermentation in bottles and kegs.
Here’s Josh Cockrell’s explanation of the name: “Serrata means serrated or sawlike. It’s entirely inspired by the looks and the herbal ‘bite’ of Shiso.”
Serrata will be release this Friday at 4pm in our tasting room. It will be available by the glass and in bottles to go. We have about 2,200 bottles available (750ml/$14). There’s no bottle limit. We anticipate that some of the batch will be distributed beyond our tasting room. We hope you enjoy!
