WHY: All natural liquid chocolate is better for brewing specialty beers and Colorado-based Cholaca created customized bulk containers to ensure better transfer, improve sanitation and provide greater consistency. Per Tim Matthews, Master Brewer at Oskar Blues: “The beer making process with Cholaca is incredibly easy because we’re able to let the fermentation go through and then we’re able to infuse the Cholaca because of its liquid state with the finished beer (in the bright tanks). That way we’re able to layer chocolate flavors on top of the beer flavors.”
WHO: Interviews: Master Brewer Tim Mathews explains improved brewing process (and taste) from using liquid cacao. Cholaca CEO Ira Leibtag on meeting craft brewing specifications with sustainably sourced cacao from farmers in Ecuador and Peruwho practice regenerative agriculture to preserve the rainforest and their way of life. Interactive learning activities also will highlight their contribution to beer and chocolate.

Colorado-based Cholaca and Oskar Blues Host Death by Coconut Tasting Event to Celebrate October’s Beer Festival Season and National Chocolate Day
Tim Mathews first contacted Cholaca CEO Ira Leibtag in 2014 during his search for the right kind of liquid chocolate for Oskar Blue’s latest creation, an autumnal Irish port. Tim was frustrated in achieving his high standards for taste and quality. When he increased brewing quantity, he lost some chocolate taste. Previous chocolate liquids and baking wafers did not mix well and were less stable.
The purer, natural Cholaca – made from fair-trade cacao, water and coconut sugar – circulates with full contact, producing more stable, longer lasting flavor. Though brewed with similar ingredients and in a similar manner as stout, the lighter porter benefits from the reduced consistency burden. Death by Coconut, the 6.5 percent ABV and slightly sweet, creamy porter brewed with Cholaca, won the Great American Beer Festival Silver Medal in 2014 in the chocolate beer category.

Cholaca’s cacao suppliers belong to two local farming co-operatives, Eco-Cacao and UOPROCAE, which distribute profits among their members. Cholaca’s indigenous partners produce some of the finest cacao in the world in the world. Deforestation and unsustainable farming threaten the world’s chocolate supply.
