Peter Bouckaert’s “Choice” 54th Birthday Pairing is a food and beer birthday pairing that celebrates Peter’s 54th year and will feature four tasters and 
four small plates from Choice City Butcher & Deli. The fun starts promptly at 6:30 p.m. starting with the first course. Space is limited. Cost: $54 per person.
The menu, which Peter selected himself, will challenge and delight your tastebuds.
- First course: Veal Roulade with Jaeger Sauce paired with Bière de Mars
- Second course: Blood Sausage Crostini paired with Smoeltrekker #006
- Third course: Beef Tacos de Lengua (beef tongue) with Brussels Sprouts Slaw paired with Nacht
- Palate cleanser: Stoemp (Belgian mashed potatoes with buttermilk)
- Fourth course: Pheasant Confit with Endive Leaves and Malt Stuffing paired with something hoppy (from Fermenter 1)
- Plus a Belgian-style holiday dessert
