Beef Chef Ian Clark has expertly paired a three-course dinner with three of his handbuilt ales for an evening to remember. The meal begins with an amuse of Shaved Guanciale with a grit cracker and pickles. Then onto the first course which includes the option of Winter Squash and Barley Soup paired with Obitus American Brown Ale with roasted dates and caramelized sugar or a Warm Red Pea Salad with charred kale, dried cranberry, and chicken chicharones paired with his 5290 Saison with tangerines. Then onto the second course, with options like the Corned Beef Brisket with potato-cabbage hash, malt glazed carrots, and wee heavy peanut jus.
